  1. Preheat oven to 350°F.
  2. Soak matzos in water until soft, drain in colander, but do not squeeze dry.
  3. Beat eggs with salt, sugar, oil, and cinnamon.
  4. Add to matzo mixture in large bowl.
  5. Stir in nuts, mangos, and raisins.
  6. Pour into a well-greased 13x9 inch pan.
  7. Bake in preheated oven for 45 minutes or until lightly browned.
  8. Cool slightly, cut into squares for serving.
  9. Freezes and reheats beautifully.
