This recipe came from an estate sale. I obtained it when I purchased the family collection from the Henson Estate in Dallas, Texas in 1982.

  1. Cook and mash potatoes.
  2. Cook onion and carrot until soft then purée carrots and onion in food processor.
  3. Combine potatoes, carrot mixture, butter, salt, pepper, parsley, half and half and egg and pour into baking dish.
  4. Drizzle with melted butter and bake at 350°F for 40 minutes.
  5. Sprinkle with parsley and serve hot.
