Marlene's Squash

8 small yellow crookneck squash 3 scallions, chopped, green and white parts About 1 cup water 2 bacon slices 1/4 cup sugar Salt and pepper to taste

Boil squash and onions in water until tender. Meanwhile, fry bacon until crisp and drain. Pour off all but 1 T. of the drippings. Mash squash. Place in skillet with drippings, sugar, salt and pepper. cook until all water is gone and squash begins to brown and caramelize. Serves 4 Source: Noted Cookery
