2 lbs. cooked medium fresh shrimp, shelled and deveined but with tails left on OR 1 1/2 lbs. cooked frozen shelled deveined shrimp, thawed 1 medium red onion, sliced 2 small lemons, sliced 1/2 cup sliced pitted black olives 1/2 cup olive or vegetable oil 3 T. red wine vinegar 3 T. lemon juice 1/3 cup chopped parsley 1 clove garlic, halved 1 bay leaf 1 t. dry mustard 1 t. chopped fresh basil OR 1 t. leaf basil, crumbled 1 t. salt 1/4 t. pepper
Layer shrimp, red onion, lemon slices and black olives in medium bowl. Mix oil, vinegar, lemon juice, parsley, garlic, bay leaf, dry mustard,basil, salt and pepper in a jar with a tight fitting lid. Cover; shake to blend well. Pour marinade over shrimp. toss gently; cover. refrigerate overnight. toss occasionally. Serve chilled. Serves 12 Source: My Old Recipes
