  1. Sear meat in pot.
  2. (this gives greater flavor and color).
  3. Cover with water.
  4. Let it come to a boil and skim the foam off.
  5. Add salt, peppercorns, and let simmer for 1 hour.
  6. Stick 2 cloves into each onion.
  7. Add the carrots, celery, parsley root and greens, parsnips and onions.
  8. Cover and simmer slowly for about 2 hours.
  9. Add potatoes last hour of cooking.
