Mango Coffee Cake

- 1/2 c. butter or margarine
- 1 tsp. soda
- 11/2 c. Sugar
- 1/2 c. buttermilk or sour milk
- 2 eggs
- 1 tsp. vanilla
- 2 c. sifted flour
- 1/2 c. chopped nuts
- 1/2 tsp. salt
- juice of one lime or lemon
- 11/2 tsp. baking powder
- 1/2 c. confectioners Sugar
- 11/2 c. mango pulp

- cream shortening; add Sugar gradually, cream until fluffy.
- Beat in eggs one at a time.
- Add mango pulp and beat well.
- Sift together dry ingredients.
- Add alternately with milk.
- Add vanilla and blend.
- Add nuts, turn into a 11 1/2" x 7 1/2" pan or two 8" layer pans greased and floured.
- Bake 350 degrees for 25-35 minutes.
- Glaze with juice of 1 lime/lemon and 1/2 c. confectioners Sugar.
