  1. Combine potatoes, garlic, walnuts and salt in a food processor.
  2. Puree 30–45 seconds, until well blended.
  3. Slowly pour in lemon juice, oil and vinegar, alternating between them, and continue pureeing 2–4 minutes until mixture is a smooth paste a little looser than mashed potatoes in texture.
