Macaroni Sausage and Aubergine

This is a very tasty combination


  • 10.5 oz of penne macaroni
  • 1 medium aubergine
  • 4.5 oz of potatoes
  • 1 onion
  • 1 clove of garlic
  • 1 lb of tomatoes
  • 1 red pepper
  • 1/4 chili pepper
  • A pinch of oregano
  • Parsley
  • 1/2 glass of dry white wine
  • Olive oil
  • Salt
  • Pepper
  • Grated Parmesan cheese


saute the onion lightly in olive oil, a peeled sausage and shredded. Fry it for a couple of minutes, add the wine and let it evaporate. Meanwhile dice the aubergine and place it in a strainer with a little of salt to dehydrate it. Once done, add the sausage.
Also add the already peeled pepper cut in strips and the chili pepper. Mix and simmer for 5 minutes. Add the tomato, oregano, salt and pepper and simmer for another 20 minutes. The sprinkle the parsley crushed with the garlic and cook for another 10 minutes. Finally add the pasta and sprinkle the grated Parmesan cheese.
