Lentils are widely used in Greek kitchens and very popular in Indian kitchens where they call it dhals, lentils come in a variety of types, here are a few: urid dhal has a dark skin with a creamy centre; red dhal is red in colour; chana dhal is smaller than toor dhal, somewhat larger and rounder and are interchangible; brown dhal is flat with a yellow inside; moong dhal has a green skin with a yellow centre.
