Ingredients Edit

  1. 2/3 c red lentils
  2. 1 inch piece ginger,=grated
  3. 4 tb vegetable oil
  4. 1 tb Ground coriander
  5. 4 md Green bell peppers
  6. 1 1/4 c water
  7. 1 ts cumin seeds
  8. salt & pepper
  9. 2 onions, chopped
  10. 2 tb Chopped cilantro
  11. 2 Green chilies

Directions Edit

  1. Rinse Lentils & soak for 30 minutes.
  2. Heat half oil in skillet.
  3. Add peppers & cook for 3 to 5 minutes till golden brown. Drain & cool.
  4. Add remaining oil to pan.
  5. Cook cumin till they begin to pop.
  6. Add onions & chilies & cook for 8 minutes.
  7. Stir in ginger & coriander.
  8. Drain Lentils add to the pan with water.
  9. Stir well & cover.
  10. Cook for 15 to 20 minutes until lthe liquid has evaporated.
  11. Stir in salt & pepper.
  12. Add cilantro.
  13. Cut tops off peppers & remove seeds.
  14. Stuff with the Lentils & replace the tops.
  15. Stand in a baking dish.
  16. Bake at 350F for 15 minutes.
