  1. Slice tomatoes downward into 6 or 8 sections, leaving them attached at the base. Set aside.
  2. Combine rice, Lentils, onion, celery, carrots, raisins and lemon pepper in large bowl. Toss with dressing.
  3. Spoon ½ cup of rice mixture into center of each tomato.
  4. Serve garnished with lettuce.
