- ½ cup lemon juice
- ½ cup soy sauce
- ¼ cup sugar
- 3 tbsp brown sugar
- 2 tbsp water
- 1½ tbsp minced garlic
- ¾ tsp ground ginger
- 8 boneless skinless chicken thighs
- hot cooked rice
- Combine first seven ingredients in a large skillet.
- Cook over medium heat for 3 – 4 minutes or until sugar dissolves.
- Add chicken; cook for 30 – 35 minutes or until chicken juices run clear, turning chicken occasionally.
- Serve over rice.
