lemon Pistachio Crescents Cookies
- 1 Cup Shelled Unsalted Pistachios
- 2 Cups Confectioners sugar
- 1 Cup unsalted butter, Softened
- 2 Tsp lemon Zest
- 1 Tbs lemon juice
- 1/2 Tsp vanilla
- 2 Cups flour
- 1/2 Tsp salt
Pulse Pistachios And 1/4 Cup sugar in Food Processor Until Finely Ground. Beat butter, 1/2 Cup sugar, Zest, Juice, And vanilla in a Bowl Until Fluffy. Beat in Nut Mixture, Then flour And salt to Blend. Cover And Chill 1 Hour. Heat Oven to 350 Degrees.* Roll Heaping Teaspoons Dough Into 3 Inch Ropes, Shape Into Crescents. Place on Ungreased Baking Sheets.
