- In a mixing bowl, stir together 3 cups of the flour and salt.
- Combine eggs, lemon juice and olive oil; add to flour.
- Mix well.
- Sprinkle kneading surface with remaining flour and knead for 10 minutes.
- Cover and let rest 10 minutes.
- Roll out and cut into desired shapes.
- Cook like regular pasta.
