  1. 2 cup all-purpose flour Sifted
  2. 3/4 cup Sugar
  3. 3 1/2 tsp baking powder
  4. 1/2 tsp baking soda
  5. 1/2 tsp salt
  6. 1 egg
  7. 2 tbl Grated orange Rind
  8. 1/2 cup orange juice
  9. 3 tbl Melted butter
  10. 2 tbl Hot water
  11. 1 1/2 cup cranberries Halved
  12. 3/4 cup Chopped nuts

Directions Edit

1. Sift flour, Sugar, baking powder, baking soda and salt into a large bowl.

2. Beat egg lightly in a small bowl, stir in orange rind and juice, butter and hot water. Add to dry ingredients; mix thoroughly. Fold in cranberries and nuts. Turn batter into a well-greased 9x5x3-inch loaf pan.

3.Bake at 350F oven for 50 minutes or until cake tester inserted in center comes out clean. Remove from pan; cool on wire rack.
