- 2 cups cooked, brown rice
- 1 cup skim milk
- 2 1/2 cups shredded carrots
- 2 eggs
- 2 teaspoons brown sugar
- 1/4 teaspoon ground nutmeg
- 2 tablespoons crushed cereal flakes
Simmer uncovered until most of the liquid reduces and mixture is creamy, 5 to 10 minutes.
Mix with remaining ingredients, except cereal crumbs, in 3-quart casserole. Sprinkle with crumbs.
Bake uncovered in preheated 325-degree oven
Slightly less than an hour until set.
FOR THREE 8 x 4-INCH LOAF PANS:
PREPARE as above. Bake for 55 to 60 minutes.
FOR FIVE OR SIX 5 x 3-INCH MINI-LOAF PANS:
PREPARE as above. Bake for 50 to 55 minutes
