LOBSTER SOUP

Lobster Soup is, of course, the king of soups. It is for special occasions and when you need an outstanding dish to start your menu.

  1. In a 2-quart saucepan:
  2. Simmer until tender: 1 Ib. ROCK LOBSTER TAILS in
  3. 1 1/2 quarts water and
  4. 1 tsp. salt. Reserve water.
  5. In a 3-quart saucepan:
  6. Saute: 1 cup onions, thinly sliced in
  7. 4 oz. butter until soft but not brown.
  8. Add: 2 medium tomatoes, cut into small wedges
  9. 1 clove garlic, mashed
  10. 1 tsp. SALAD HERBS
  11. 1/2 tsp. nutmeg
  12. 1 tsp. salt
  13. 1/2 tsp. pepper and
  14. 1 piece lemon peel.
  15. Simmer for 15 minutes.
  16. Add 1 cup DRY white wine.
  17. Heat until it bubbles.
  18. Add 1 quart water from Rock Lobster.
  19. Cook for 5 minutes longer.
  20. Put mixture through food mill or sieve.
  21. Add: the lobster meat chopped finely and
  22. 1/2 cup light cream.
  23. Correct the Seasoning.
  24. Serve in soup cups.
