  1. In a large saucepan, fry bacon until crispy.
  2. Add onion, rice and spices.
  3. Fry until rice is lightly browned and onions are nearly clear.
  4. Add diced tomatoes and ½ to ¾ cup of water.
  5. Bring to a boil.
  6. Reduce heat and simmer for 20 minutes or until rice is tender.
