German potato salad

  1. In a small bowl, combine oil, herbs, beef broth, vinegar, mustard, sugar and onion.
  2. Set aside.
  3. Steam potatoes until tender.
  4. Peel and slice potatoes into 1/16th inch slices while still warm.
  5. Add to oil mixture and mix carefully.
  6. Let stand 1 hour or until potatoes have absorbed most of the liquid.
  7. Mix again without break potatoes and season to taste with salt and pepper.
  8. Refrigerate until ready to use.
