A lovely accompaniment to any meal, this is a hearty and healthy dish.

Brush the margarine on one side of the Cod and put it under a medium heat grill for 5 minutes. Turn the Cod over, brush the other side with margarine and return to the grill for another 3 minutes.
Sprinkle the parsley on the Cod and cover with the Cheese. Slice the tomato and put on top of the Cheese.
Place the dish under the grill for a few more minutes until the Cheese is melted.
