(Cod with cheese. A lovely accompaniment to any meal, this is a hearty and healthy dish.
- Brush the margarine on one side of the cod and put it under a medium heat grill for 5 minutes.
- Turn the cod over, brush the other side with margarine and return to the grill for another 3 minutes.
- Sprinkle the parsley on the cod and cover with the cheese.
- Slice the tomato and put on top of the cheese.
- Place the dish under the grill for a few more minutes until the cheese is melted.
