KENTUCKY SUGAR CURED RICE

Makes 4 servings.

- 1/2 cup minced Onion
- 1 tablespoon butter or margarine
- 1 tablespoon plus 1 teaspoon dark brown sugar
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- 1/4 teaspoon salt
- 1/8 teaspoon ground cloves
- 1/16 teaspoon ground white pepper
- 2 cups cooked rice
- 1/4 cup chopped pecans
- 2 tablespoon golden raisins

Cook Onion in butter until soft. Add brown sugar; heat until melted. Combine mustard, honey, salt, cloves, pepper, rice, pecans and Raisins; heat thoroughly. Serve with slices of smoked Ham.
