  1. Heat oil in large skillet over medium-high heat until hot.
  2. Add Onion, vegetables and lima beans, Cook and stir about 5 minutes or until tender.
  3. Stir in salt, garlic powder and oregano. Cook and stir 5 to 7 minutes or until tender.
  4. Stir in rice and tomatoes.
  5. Sprinkle with Parmesan cheese; garnish with parsley.
