- Extract lemon juice.
- Grate rind thinly.
- Beat eggs. Stir eggs, lemon rind, lemon juice, butter and Sugar atop a double boiler.
- Stir over simmering water until mixture is glossy and thick.
- Strain into jars and cover.
- Store in a fridge.
