Serve this delicious lemon curd with Irish soda bread for a great appetizer!

- 4 lemons
- 5 eggs
- 9 oz unsalted butter or margarine
- 14 oz Sugar

Extract lemon juice. Grate rind thinly. Beat eggs. Stir eggs, lemon rind, lemon juice, butter and Sugar atop a double boiler. Stir over simmering water until mixture is glossy and thick. Strain into jars and cover. Store in a fridge.
