Halibut Chowder

  1. Remove skin and bones from Halibut.
  2. Cut into bite-sized pieces.
  3. Saute vegetables in 3 tablespoons butter.
  4. Add Halibut, chicken broth, salt and pepper.
  5. Simmer, covered for 5 minutes.
  6. Add milk and heat gently.
  7. Combine remaining 3 tablespoons butter with flour and add to chowder.
  8. Cook and stir until slightly thickened.
  9. Add Cheese and sprinkle with parsley.
