- Peel desired number of tomatoes.
- This can be done easily by plunging each tomato in boiling water, then into iced water for a few seconds.
- Peel tomatoes. If they have a lot of seeds and liquid, press them out.
- Slice and sprinkle with salt and pinch of Sugar (optional).
- Drain after half an hour and season with vinaigrette, parsley and chopped shallots. Chill.
