  1. Heat milk to 86 °F (little better than lukewarm) remove from heat.
  2. Add dissolved tablet, stir (dissolve tablet by stirring in tablespoon of warm water), cover and set for 45 minutes.
  3. Cut down and across with spoon, set again for 10 minutes.
  4. Remove excess water.
  5. Wet cheese cloth bag.
  6. Set in sink and pour cheese in bag.
  7. Twist opening, place heavy object on top.
  8. After ½ hour, shake bag down.
  9. Set two hours or until cheese is firm.
  10. Remove from bag, cut in pieces, place in bowl and refrigerate.
  11. After third day, dip each piece in salt and refrigerate.
