Ingredients Edit

  • ½ - ¾ oz flour
  • ½ - ¾ oz oil
  • 1 small Onion
  • 1 pt brown stock
  • 1 tsp ketchup, if desired
  • pepper and salt
  • Piquanté sauce

Directions Edit

  1. Slice the Onion.
  2. Add the Onion and flour to the oil, and cook over a low heat until a rich brown colour is achieved. Stir continually to prevent uneven browning and burning.
  3. Add the stock, again stirring continually to prevent lumpiness.
  4. Season. Skim and simmer for 30 minutes. Strain for use.
