Guyanese Baked Beans

• 1 lb. kidney beans
• 2 medium onions, peeled & thinly sliced
• ½ - ¾ lb. salt belly of Pork, cut into 1 inch cubes
• 4 tbsps. soy sauce
• 2 level tsps. dry mustard
• 1 level tsp. salt
• good shake of pepper

[edit] Directions

1. Wash Beans, and cover with water overnight.
2. Simmer or pressure cook until tender.
3. Drain, and save the liqour. Heat oven to 300 degrees F.
4. Place Beans, Pork and onions and other seasonings in 2 quart fire proof dish.
5. Add enough liqour to cover and bake for 2 hours until tender.
