  1. Place fish in glass dish.
  2. Combine soy sauce,sherry, carrot, garlic, red pepper, ginger, scallions and lemon zest.
  3. Pour over fish.
  4. Cover and set aside 1hr at room temperature.
  5. Remove fish from marinade and pat dry,and brush with oil.
