Grilled Cajun Pork with Rice, Beans and Corn

Ingredients Edit

Cajun Rub Edit

  • 3 tbs paprika
  • 1 tsp each cumin, cayenne pepper and allspice
  • 1 1/2 tsp salt
  • 2 tbs light brown sugar

Pork and Rice Edit

  • 6 center cut boneless pork chops
  • 2 cups long grain white rice
  • 15 oz can kidney beans
  • 10 oz pkg frozen corn, thawed
  • 3 scallions, sliced

Directions Edit

Cajun Rub Edit

  1. Combine all ingredients.
  2. Reserve 1 tsp rub.

Pork and Rice Edit

  1. Sprinkle remaining rub on both sides of pork. Let stand 20 min.
  2. Bring 4 cups water to a boil in saucepan.
  3. Add rice and reserved rub.
  4. Cover, simmer 20 min.
  5. Drain and rinse beans, add to rice along with corn and scallions.
  6. Cover and cook 5 more min.
  7. Prepare grill.
  8. Grill pork 4 min. per side or until done.
  9. SERVE WITH RICE ON THE SIDE. Makes 6 servings.
