Cook Time: 10 muinutes
- 1-1/2 pounds fresh green beans, trimmed and rinsed
- 3 tablespoons olive oil
- 2.5 tablespoons pine nuts
- 1 cups cherry tomatoes, halved
1.Bring a large frying pan of water to a boil. Add the beans and cook for about 2 minutes.
2.Drain beans and immediately immerse in cold water to instantly stop cooking. Drain in a colandar then gently pat dry.
3.Heat oil in a medium skillet over medium heat. Add shallots and sauté until golden brown. Add pine nuts and cook for about 3 minutes.
4.In a medium sized serving bowl, add the beans, tomatoes, shallots and pine nuts then gently toss until combined then serve.
