- Wash beans and add water and salt.
- Cook until tender. (If fresh beans are unavailable, omit this first step. Instead, drain and rinse canned beans.)
- Drain, reserving water.
- To ½ cup cooking water, add vinegar, oil, onion, garlic, and oregano.
- Pour over beans and let stand for at least 6 hours.
