German Sweet-Sour Beans
1 C minced onion
Butter
1 T flour
1 1-lb can green beans
� C vinegar
2 T sugar
1 t salt
� t pepper
2 strips bacon
Saut� onion in butter until transparent; stir in flour until smooth. Drain beans, reserving � cup bean liquid. Stir reserved bean liquid, � cup water and vinegar into onion mixture gradually. Cook, stirring, until smooth and slightly thickened. Add seasonings and beans; heat through. Fry bacon until crisp; drain and crumble. Sprinkle bacon over bean mixture.
Yield: 4 servings
