Garlic Potatoes 3 lbs. cooked potatoes, cubed (peeled or unpeeled�baked works too) 6 cloves garlic, crushed 2 tsp. Kosher salt 1 tsp. freshly cracked pepper 2 tsp. dried oregano 6 Tbs. olive oil

Spray a large sheet of aluminum foil (or a foil cooking bag) with nonstick spray. Drizzle with 2 tablespoons oil. Center potatoes on foil and top with garlic, salt, pepper, oregano and remaining oil. Bring up ends and seal tightly around edges. Shake a bit to evenly distribute ingredients. Place over indirect heat on charcoal or gas grill, turning every 15 minutes or so until heated through, about 30-40 minutes.

Alternately, place on a baking sheet and bake at 350 for 30 minutes until heated through, turning once or twice. Cut open foil and empty into serving dish, stirring before serving. Also delicious cold.
