• 1 med. or lg. onion, chopped
  • 1/2 c. olive oil
  • 1/2 or 1 lb. shrimp
  • 1 1/2 c. canned tomatoes
  • 3/4 or 1 c. uncooked rice
  • 1/2 tsp. dried oregano leaves
  • Salt and pepper to your own taste
  • 1 1/2 c. water

  1. Saute onion in olive oil until golden brown.
  2. Combine all other ingredients, cover and simmer until water is absorbed.

Makes 6 servings.
