- 1 med. or lg. onion, chopped
- 1/2 c. olive oil
- 1/2 or 1 lb. shrimp
- 1 1/2 c. canned tomatoes
- 3/4 or 1 c. uncooked rice
- 1/2 tsp. dried oregano leaves
- Salt and pepper to your own taste
- 1 1/2 c. water
- Saute onion in olive oil until golden brown.
- Combine all other ingredients, cover and simmer until water is absorbed.
Makes 6 servings.
