GARBAGE POTATO SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Dingo Estate in Austin, Texas in 1991. 6 cups red potatoes 1/2 red onion 1/2 green pepper 2 stalks celery 1 medium tomato 1/4 cup minced raw carrots 2 hard boiled eggs 3/4 cup mayonnaise 2 tablespoons bacon bits 1/4 cup spicy mustard 1 teaspoon salt 1 teaspoon pepper 1 tablespoon parsley 1/4 teaspoon chili powder Cube potatoes (do not peel) then add to stockpot and bring to boil. Cook until tender. Drain in colander and set aside to cool. Dice onion, pepper, celery and tomato and add into large bowl then add minced carrots. Chop one egg and add to bowl. Add potatoes, mayonnaise, bacon bits and mustard and mix well. Add salt and pepper. Scoop salad into serving dish and with a wet spoon flatten surface. Slice last egg longwise into ovals and place on top of salad. Garnish with parsley and chili powder.
