Gambas al Ajillo

Shrimp in garlic sauce

  1. Heat the olive oil on medium high in a large frying pan.
  2. Add the fresh shrimp.
  3. Fry for a few minutes until lightly browned.
  4. Add the garlic, chile, salt and black pepper.
  5. Saute another minute over high heat.
  6. Add the fresh lemon juice, white wine and another generous splash of olive oil.
  7. Saute until shrimp is fully cooked, and liquid is slightly reduced another minute.
  8. Garnish with parsley and serve with rustic bread to soak up the lemony, olive oil.
