� lbs black beans
1 large onion, chopped
3 green peppers, chopped
1 clove of garlic, minced
� C olive oil
1 T salt
1 oz. whole bacon
� lb hambone
3 bay leaves
� C vinegar
Soak beans in 1-1/2 quarts water overnight. Fry onion, green peppers and garlic in olive oil until tender. Add onion mixture, salt, bacon, hambone and bay leaves to beans. Cook over low heat until beans are tender and liquid is thickened. Add vinegar; heat through.
Yield: 4 servings
