- 1 Bream per person
- thyme, 2 sprigs
- Garlic 1 clove
- a little olive oil
- flour for dusting
- Clean and scale each fish, snip off fins.
- slash each side.
- season with salt and pepper.
- slice garlic
- place fish, garlic, thyme and a dash of oil in a plastic bag, leave to marinade in refrigerator for 1 hour
- remove from bag dust with flour and shallow fry in hot oil until golden brown
