• 1 Bream per person
  • thyme, 2 sprigs
  • Garlic 1 clove
  • salt
  • pepper
  • a little olive oil
  • flour for dusting

Preparation Edit

  1. Clean and scale each fish, snip off fins.
  2. slash each side.
  3. season with salt and pepper.
  4. slice garlic
  5. place fish, garlic, thyme and a dash of oil in a plastic bag, leave to marinade in refrigerator for 1 hour
  6. remove from bag dust with flour and shallow fry in hot oil until golden brown
  7. serve
