Fresh Tomato Soup

 Fresh coriander has three different names depending on where you live and shop.  Perhaps  you know it as cilantro or Chinese parsley.
 1 med. onion, chopped
 1 clove garlic, minced
 1 Tbsp. vegetable oil
 4 c. chopped fresh tomatoes
 1 c. chicken broth
 1 Tbsp. chopped fresh coriander or parsley
 1/2 t. salt
 1/8 t. pepper
 1/3 c. grated Parmesan cheese
 Saute onion and garlic in oil in a large non-aluminum saucepan over medium heat until onion is soft, about 4 minutes.  Add tomatoes, broth, coriander, salt and pepper.  Heat to boiling; reduce heat.  Simmer, covered, for 15 minutes.
 Transfer tomato mixture to blender or food processor container; process until smooth.  Return soup to saucepan; heat until hot.
 Ladle soup into serving bowls; sprinkle with cheese.
