  1. 6 medium sized tomatoes or about 2 pound Italian plum tomatoes
  2. 1 Onion, chopped
  3. 1 stalk celery, chopped
  4. 2 cups broth or water
  5. 1 tablespoon tomato paste
  6. 1/2 teaspoon dried basil
  7. 1/4 teaspoon freshly ground pepper
  8. 1/2 teaspoon salt

Directions Edit

Cut tomatoes into thin wedges and place in 1 1/2 quart saucepan with all ingredients. Simmer uncovered for 30 minutes. Strain to remove tomato skins and seeds. Adjust seasonings. Serves 4-6
