  1. Soak black eye beans overnight.
  2. Pressure beans with water for 10 minutes.
  3. Drain off most of the water and put in a blender or food processor.
  4. Put in a pot with brown sugar and cook until it becomes thick.
  5. Add a few drops of food coloring to obtain a dark color.
  6. Add vanilla and let it cool.
  7. Mean while, make the pastry.
  8. Roll flat and cut into 5 inches circles.
  9. Use two circles.
  10. Then put a tablespoon of bean filling in your circles and bring the sides up together and twist to close, making a round ball.
  11. Continue until all are done.
  12. Put in pan, brush with beaten eggs.
  13. Then using your finger put a drop of food coloring in the middle of the Dhinese cake.
  14. Bake until brown at 400°F.
