Finnish Three-meat Ragout

  1. Preheat oven to 300°F.
  2. Cut the meat into 1-inch cubes.
  3. In an enameled, cast-iron pot or other deep oven proof casserole, layer the meat, salt, allspice, white peppercorns, and onion.
  4. Cover lightly.
  5. Bake for 5 hours, or until the meat is very tender.
  6. Sprinkle with chopped fresh parsley and serve over mashed potatoes or mashed potatoes and rutabagas.
