Salmon tartar with coriander, caviar and lime-sauce
Ingredients[]
- 300 gr salmon, bonleless and skinned
- 1 – 2 shallots, finely chopped
- ¼ pimento, finely chopped
- Small bunch of fresh coriander, chopped
- salt and white pepper from a grinder
- Good caviar (salmon-caviar, lumpfish- or capelin roe).
- 1 dl sour cream
- Juice of 1 lime
- 1 teaspoon Dijon mustard
- ½ teaspoon maple syrup
- salt and white pepper from a grinder
- lime and coriander for garnish.
Directions[]
- Mince or coarsely chop the salmon, preferably in a food mixer. (Don´t mush it!)
- Combine with the shallots, pimento and chopped coriander leaves. Season with salt and pepper
- Form the mixture into little towers. Put one teaspoon Caviar on top.
Sauce[]
- For the sauce you stir together the sour cream, lime-juice, mustard and maple syrup.
- salt and pepper to taste.
- Place the salmon-tartar and sauce on a plate and garnish with lime wedges and coriander leaves.
