About Redfish[]

Red fish (Sebastes marinus) also known as ocean perch is a member of family: Sebastidae, genus: sebastes and it is the largest species of the family. Sebastes marinus or redfish has a red colored skin and it can be found in waters less than 120 fathoms, at depths of 100 to 1000 meters. The red fish is a small fish with dorsal fins and firm and spiny opercle. Red fish can be found in Northern Atlantic Ocean and in the Pacific Ocean. During the period they are young the ocean perch has a brown color which becomes red when they get older. Red fish feeds itself with small and young fish when they are young and after they get older they eat capelins and herrings. Red fish dimensions can vary from fifty or fifty five centimeters to sixty or seventy centimeters for the females and for males the dimensions vary from forty to forty five centimeters. Redfish are known to grow slow about six to eight centimeters at an interval of ten years and they live long until forty years old.

A type of rockfish found along the West Coast, which has a pinkish flesh that is mild flavored. Generally ocean perch are quite tender and can be used in any recipe that calls for a white fleshed fish. To check the fish for doneness, use the tip of a sharp knife and cut through the thickest part of the fillet. If the fish has been properly cooked, the meat will appear opaque but will still be moist.
