Belvoir Crumpets

Description

You could also serve this mixture grilled on toast. Makes 8.

Ingredients

• 175 g (6 oz) Stilton cheese, crumbled
• 25g (1 oz) softened butter
• 1 tbsp port
• 1 tbsp natural yogurt
• 25g (1 oz) mixed nuts, chopped
• 8 crumpets
• 8 walnut halves
• chopped fresh parsley chopped to garnish

Directions

1. Combine Cheese and butter. Stir in port, yogurt and nuts.
2. Toast one side of each crumpet.
3. Spread the Cheese mixture onto the untoasted side of the crumpets and grill until bubbling.
4. Garnish with walnuts and parsley, and serve hot.
