Alphonso olive

The Alphonso olive is a black olive which is native to Chile and has a distinctive red juice. It has a blush red color which darkens to a dark purplish-black as it matures. It is oval in shape and has a meaty texture and fruity flavor.

It is usually brine-cured in vinegar and has a rich olive flavor that may be slightly bitter or acidic in taste. It makes an excellent appetizer, but is also used to season soups, stews, and other foods. Olive oil made from these olives serves as a global export.
