Norwegian Pea Soup

NORWEGIAN PEA SOUP

Ingredients

• 1 pound green or yellow split peas
• 2 quarts boiling water
• ¼ pound lean salt pork (in one piece)
• 1 large carrot, diced
• 1 large stalk celery, including leaves, diced
• 5 green onions, including tops, sliced
• 2 tsp salt (varies with saltiness of Pork)
• ¼ tsp pepper

Directions

1. Sort peas.
2. Place in boiling water at moderate heat; add salt pork.
3. Cover and simmer about 1½ hours.
4. Add remaining ingredients; cover and simmer, stirring, 1 to 1½ hours or until quite thick ).
5. Add salt if desired.
