Fairfield Zucchini Casserole
1 1/2 pounds zucchini, (4 cups) diced 1 medium onion, diced Saute in 2 T. butter, until tender and transparent
Fold in 4 oz. can chopped green chili's
Stir in 2 T. flour 1 tsp. salt pepper to taste
Put in greased 8 x 8 baking dish.
Sprinkle 1 1/2 cups Monterey jack cheese. Mix 1 beaten egg with 1 cup cottage cheese and 1/2 cup Parmesan cheese.
Bake at 400� for 25 minutes.
